CHAMPAGNE TOAST (RM CHAMPAGNE SALON - WEST LOOP)

This lavish 1,500 square foot wine and champagne salon, tucked discreetly down a secluded cobblestone alley, offers a select menu of New American small plates. A wide-ranging collection of bubbles are popped and poured in an elegant yet accessible dining room adorned with eclectic frames of vintage artwork. RM Champagne’s obsessively curated portfolio features a large selection of estate-grown wines from vignerons who are intensively involved from bud-break to bottling.

CRAFT COCKTAILS (THE BRISTOL - BUCKTOWN)

The Bristol serves seasonal New American cuisine, highlighting familiar and comforting dishes in a rustic space. With fresh ingredients gathered from farmers and foragers, the restaurant honors the best of the season’s bounty. An airy dining room of communal tables and exposed brick provides the perfect backdrop for enjoying the seasonally inspired cuisine, inventive cocktails, wines and beers.

EXCEPTIONAL WINES (THE BOARDING HOUSE - RIVER NORTH)

The Boarding House is inspired by simple dishes using only the freshest products. At the first floor’s main bar, guests can enjoy a selection of 20 wines by the glass, 450 wines by the bottle, custom cocktails, specialty spirits and craft beers to pair with traditional cheese and charcuterie provisions or the full menu of Mediterranean-driven fare. The third floor features a magnificent dining room of exposed beams, inlaid hardwood floors and tables, large bay windows and plush banquettes.

INVENTIVE SOFT DRINKS (THE DAWSON - RIVER WEST)

The Dawson is a restaurant, bar and gathering place that celebrates the craft of food, drink and hospitality. From French technique and American ingredients to Japanese-inspired simplicity, Executive Chef Shaun King's cooking uses bright, fresh ingredients to create a range of diverse dishes bursting with flavor. House-made sodas featuring fresh juices, essential oils and syrups made in house accompany handcrafted cocktails and a range of wines and draft beers, complementing the kitchen’s focus on seasonality.
