Showcasing a variety of European influences in its cuisine, ROOT prepares its popular seafood dish “a la plancha”, a method of searing food on extremely hot metal plates (planchas), a tradition home to a tiny country sandwiched between Spain and France called Andorra. Once cooked, the scallops, shrimp and squid are tossed with a lemon-aleppo pepper vinaigrette.
