dishes out regional Italian, California-inspired fare by Chef Thomas McNaughton. The restaurant works directly with farms to craft dishes for a menu that changes daily, with the help of a classic wood-fired oven and in-house butchery. Exposed wood beams, high ceilings and nature-inspired decor fill out the casual, rustic space.
David Steele, Co-Owner and longtime Mission resident, told the NY Times, “From the beginning, we had a vision of a restaurant of the neighborhood, by the neighborhood, and for the neighborhood. When the hype dies down, it’s the people in the neighborhood who are going to keep us in business.”
This altruistic and pragmatic attitude is reflected in Flour + Water’s approach to the food. Chef McNaughton learned to make pasta in Bologna, Italy in a pasta “laboratorio” run by “a dozen Italian ladies of all ages dressed in pastel pink chef coats.”
